Our Wood-Fired Oven

The beating heart of our pizzeria is our authentic wood-fired oven, built according to Neapolitan traditions. With a high temperature exceeding 400°C (752°F), it allows the pizza to cook in under 90 seconds, achieving the perfect balance between a tall, soft crust and a thin, crispy center.

Wood-fired baking gives our pizzas that distinctive smoky aroma, impossible to replicate with modern ovens. We use only carefully selected woods that do not alter the flavor of the ingredients but instead enhance their qualities.

Our dough, slowly leavened for at least 24 hours, becomes incredibly digestible and develops complex aromas, making our pizza an unforgettable culinary experience.

Artan is an experienced and passionate chef, recognised for his ability to think outside the box when creating innovative menus. A connoisseur of culinary trends, he knows how to combine flavours for tasty dishes and enticing menus. He effectively manages the kitchen and staff, ensuring an organised and safe environment, with a focus on customer needs and product quality.

Chef

Sotir Semini

Sotir Semini is a talented young chef with high-level international experience. Raised in Sanremo and passionate about cooking from a young age, he has worked in Three Michelin-starred restaurants such as Waterside Inn in Bray and Alain Ducasse at The Dorchester in London.

In 2022, he won the Gosset Matchmakers competition, thanks to his skill in pairing refined flavors with exceptional champagne. He is now working on his own project: a family bistro in Bad Ragaz, Switzerland, where he aims to highlight local products and create unique gastronomic experiences.

At Ristorante & Pizzeria Acquerello, we firmly believe that the quality of food starts at the source. That’s why we work closely with local producers and directly import from Italy only those ingredients essential to ensuring the authenticity of our dishes.

Sustainability and regionality guide our cuisine and daily purchasing decisions. We use exclusively Swiss eggs and carefully select our meat and fish, prioritizing local products whenever possible.

We take particular pride in catering to specific dietary needs. As members of the Swiss Celiac Association, we offer gluten-free options when possible, and our menu always includes vegetarian, vegan, and lactose-free choices.

Our commitment to quality extends to the wines that accompany our dishes, featuring a carefully curated cellar with prestigious Italian and Swiss labels.
